Our menu incorporates fresh, local, and Australian produce wherever possible, which focuses on delicious and fulfilling food, including a great range of well priced pub classics. Fresh, modern and still familiar, we present a menu that perfectly complements regional Victoria's Autumn & Winter landscape- and is an ode to our passion for great pub food.

OUR EXECUTIVE CHEF Paul Martin is no stranger to the region. Paul has been in the food game for almost 40 years, starting his apprenticeship at Juliana’s Restaurant in Bendigo in 1990, and has earned his stripes as an accomplished and creative Head Chef who has run some wonderful kitchens in regional Victoria, Melbourne and Sydney. After learning his craft in his hometown of Bendigo, Paul moved to Sydney in his first role as head chef to open the iconic Speedo’s Cafe at Bondi Beach. He returned for a stint in the country taking over the kitchen at The Mill in Malmsbury. Eventually the bright lights of the city called and he took a position as sous chef at The Novotel. Since then he has worked at many of Melbourne’s best eateries including Café Florentine, Number One Fitzroy Street, The Waterside Hotel, The London Hotel, Blue Tongue, and White Rabbit. For the last five years Paul has overseen our sister venue in Melbourne, the iconic Arcobar, building a loyal clientele with his signature dishes and an award winning menu - including the LUXlife award for best suburban restaurant three years in a row.

OUR EXTENSIVE BISTRO MENU is best described as honest pub food that pays homage to many of the great country pubs around Australia. Paul's signature Philly Steak Sandwich, as well as the Publicans' Mixed Grill are tried and true favorites, and our Linguine Marinara has a been a "go-to" in our various kitchens for many years (and probably our most loved dish), with a recipe that is incredibly reminiscent of the wonderful version served at Donovans in Melbourne since they started many years ago. But it's not just all carbs & protein... our extensive menu includes a selection of original vegan, vegetarian, gluten free, and healthy salad options, as well as a selection of weekly specials that incorporate the best of local, seasonal produce, fresh from the farm gate.

Trentham has established itself as a noteworthy regional food destination, and we are proud to sit among some truly iconic restaurants, wineries and cafes. Our focus is great pub food, with something for everyone.
